Description

Trust me, these blueberry Kodiak cottage cheese pancakes are about to become your new weekend obsession! The magic happens when you combine Kodiak’s protein-rich pancake mix with creamy cottage cheese and juicy blueberries. You get incredibly fluffy pancakes with a whopping 44 grams of protein per serving, plus all those beautiful antioxidants from fresh blueberries.

Ingredients

Scale
  • ½ cup Kodiak Blueberry Pancake Mix
  • ⅓ cup cottage cheese (4% fat preferred)
  • 1 large egg (room temperature)
  • 2-3 tablespoons milk
  • ½ cup fresh or frozen blueberries
  • 1 teaspoon vanilla extract (optional)
  • Cooking spray or butter for the pan

Instructions

  1. Blend the cottage cheese smooth in a small food processor or with an immersion blender for about 30 seconds.
  2. Whisk together the blended cottage cheese, egg, and vanilla extract in a medium bowl until well combined.
  3. Add the Kodiak mix and gently fold it in without overmixing.
  4. Check the consistency and add 2-3 tablespoons of milk if the batter seems too thick.
  5. Gently fold in the blueberries using a rubber spatula.
  6. Heat your pan over medium heat and lightly grease with cooking spray or butter.
  7. Pour ¼ cup of batter per pancake and cook for 2-3 minutes until bubbles form on the surface.
  8. Flip carefully and cook another 1-2 minutes until golden brown.
  9. Serve immediately while warm and fluffy!

Notes

Always blend your cottage cheese smooth before adding to prevent lumps. Don’t overmix the batter – a few lumps are fine and help create tender pancakes. These pancakes are more delicate than regular pancakes due to the cottage cheese.
