Cinnamon Apple Muffins You'll Make Again

Cinnamon apple muffins are the kind of bake that makes your whole kitchen smell like a hug. I’m not even exaggerating the moment these hit the oven, Isabella and Emma come running from wherever they are in the house. No joke.

I first made these on a chilly Saturday morning when we had a bag of Honeycrisp apples sitting on the counter and I just wasn’t feeling plain oatmeal. Henry had been asking for something “cozy” (his word, not mine), so I pulled these together and, well… they never made it to the cooling rack. We ate them straight from the tin.

What I love most is that they’re not complicated at all. The crumb topping looks fancy but it comes together in about two minutes with your fingertips. And that thick, apple-packed batter bakes up into tall, golden muffins that are soft in the center and crisp on top. Pretty darn perfect, if you ask me.

Trust me once you try these, they’ll be on repeat every fall and winter. And honestly, any time of year.

How To Make Cinnamon Apple Muffins Step By Step

  1. Preheat your oven to 425°F. Line a standard 12-cup muffin tin with paper liners and set aside.
  2. Make the crumb topping In a small bowl, whisk together flour, sugar, salt, and cinnamon. Add the softened butter and rub the mixture with your fingertips until pea-size crumbs form. It should no longer feel sandy. Set aside.
  3. Mix the dry ingredients In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  4. Mix the wet ingredients In a large bowl, cream both sugars and butter on high speed for 2 minutes. Add the eggs one at a time, beating after each. Mix in the vanilla, then add the sour cream and milk. Beat on medium until smooth.
  5. Combine the batter Add the dry ingredients to the butter mixture in 3 additions, mixing on low-medium speed. DO NOT OVERMIX stop as soon as no dry streaks remain. The batter will be thick. Scrape down the sides.
  6. Fold in the apples Use a spatula to gently fold the diced apples into the batter. Divide evenly between the lined muffin cups (a trigger-release scoop makes this easy). Top each with about 1 tablespoon of crumb topping, pressing lightly toward the center.
  7. Bake at 425°F for 15–18 minutes, until the tops are golden and a toothpick inserted into the center comes out clean. Cool in the tin for 10 minutes, then move to a wire rack.

Frequently Asked Questions About Cinnamon Apple Muffins

What are the best apples to use for cinnamon apple muffins?

Crisp apples work best here. Granny Smith, Honeycrisp, Fuji, and Pink Lady are my top picks because they hold their shape during baking and bring a sweet-tart flavor that pairs perfectly with the cinnamon. Avoid very soft or mealy apples they tend to get mushy.

How do I keep apple muffins moist?

The secret is sour cream or Greek yogurt in the batter. Both add fat and moisture that keep the crumb soft for days. Make sure your butter, eggs, and dairy are all at room temperature before mixing this helps everything come together evenly and prevents a dense texture.

How do I know when the muffins are fully baked?

The easiest way is the toothpick test insert a toothpick into the center of a muffin. If it comes out clean or with just a few dry crumbs, you’re good. The tops should also look golden and feel set when lightly pressed. Don’t open the oven too early that can cause them to sink in the middle!
