  • 1 cup fresh blueberries (plus extra flour for tossing)


Instructions

  1. Preheat your oven to 375°F and line a muffin tin with muffin liners in every other cavity
  2. Grease the liners with non-stick spray to prevent any sticking
  3. In a large bowl, whisk together the melted coconut oil, coconut sugar, vanilla, milk, and eggs until well combined
  4. Fold in the cottage cheese – don’t worry if it looks a bit lumpy at first
  5. Add the flour, baking soda, salt, and cinnamon to your wet mixture
  6. Use a rubber spatula to gently fold everything together until just combined
  7. Toss fresh blueberries in a small amount of flour until each berry is lightly coated
