  • 1/4 tsp Italian seasoning (or dried oregano/basil)
  • Pinch of crushed red pepper flakes (optional)
  • 1 tbsp olive oil or butter (optional)
  • 2 tbsp grated Parmesan cheese (optional)
  • Fresh herbs like basil or parsley (optional)


Instructions

  1. Place the cottage cheese in a medium bowl and mash vigorously with a fork for 2-3 minutes until it starts breaking down
  2. For ultimate smoothness, push the mashed cottage cheese through a fine mesh strainer using the back of a spoon
  3. Transfer the smooth cottage cheese to a saucepan over low heat
  4. Gradually whisk in the warm milk or pasta water, starting with just a tablespoon at a time
  5. Stir in the minced garlic, onion powder, Italian seasoning, salt, pepper, and red pepper flakes if using
  6. Keep stirring constantly over low heat for 2-3 minutes until everything is well combined and warmed through
  7. Add the Parmesan cheese and olive oil or butter if using, whisk until cheese melts and sauce becomes glossy
  8. Remove from heat and immediately toss with your cooked pasta
  9. If sauce seems too thick, add a splash of pasta water to loosen it up

Notes

Always use room temperature cottage cheese when possible – it mashes more easily. Save some pasta water as it helps the sauce cling to pasta better. Keep heat low throughout to prevent curdling. Store leftovers in refrigerator for up to 3 days.
