Ingredients
- 1 cup full-fat or 2% small curd cottage cheese
- 1/4 cup warm milk or reserved pasta water
- 1 clove garlic, minced (or 1/2 tsp garlic powder)
- 1/2 tsp onion powder
- Salt and black pepper to taste
- 1/4 tsp Italian seasoning (or dried oregano/basil)
- Pinch of crushed red pepper flakes (optional)
- 1 tbsp olive oil or butter (optional)
- 2 tbsp grated Parmesan cheese (optional)
- Fresh herbs like basil or parsley (optional)
Instructions
- Place the cottage cheese in a medium bowl and mash vigorously with a fork for 2-3 minutes until it starts breaking down
- For ultimate smoothness, push the mashed cottage cheese through a fine mesh strainer using the back of a spoon
- Transfer the smooth cottage cheese to a saucepan over low heat
- Gradually whisk in the warm milk or pasta water, starting with just a tablespoon at a time
- Stir in the minced garlic, onion powder, Italian seasoning, salt, pepper, and red pepper flakes if using
- Keep stirring constantly over low heat for 2-3 minutes until everything is well combined and warmed through
- Add the Parmesan cheese and olive oil or butter if using, whisk until cheese melts and sauce becomes glossy
- Remove from heat and immediately toss with your cooked pasta
- If sauce seems too thick, add a splash of pasta water to loosen it up
Notes
Always use room temperature cottage cheese when possible – it mashes more easily. Save some pasta water as it helps the sauce cling to pasta better. Keep heat low throughout to prevent curdling. Store leftovers in refrigerator for up to 3 days.
