Ingredients for the Best Chicken Tortellini Soup

The magic of this homemade tortellini soup lies in using simple, quality ingredients that work together beautifully. Here’s what you’ll need:

For the soup base:

  • 1 tbsp olive oil helps sauté the vegetables and adds richness
  • 1 brown or white onion, chopped provides aromatic depth
  • 1 carrot, chopped adds natural sweetness and color
  • 1 celery stick, sliced creates that classic soup flavor base
  • Salt, to taste brings out all the flavors
  • 2 tsp minced garlic because garlic makes everything better
  • 2 large sprigs fresh thyme adds an earthy, aromatic note (1/2 tsp dried works too!)
  • ¼ cup white cooking wine optional but adds wonderful depth

For the creamy goodness:

  • 4 cups low sodium chicken broth the flavorful foundation
  • 2 chicken breasts protein that makes this soup hearty and filling
  • ½ lb cheese tortellini the star of the show (frozen works great!)
  • ¾ cup heavy cream creates that luxurious, velvety texture
  • ¼ cup shredded parmesan adds nutty, salty richness
  • Cracked black pepper, to taste for a subtle kick
  • Chopped parsley, for serving fresh and beautiful garnish

How to Make Creamy Chicken Tortellini Soup

Making this easy chicken soup is simpler than you might think. Let me walk you through it step by step.

Building the flavor base

Heat your olive oil in a large lidded pot over medium-high heat. Add the chopped onion, carrot, and celery with a good pinch of salt. Cook these vegetables for 6-8 minutes, stirring occasionally, until they’re soft and just starting to turn golden brown. This caramelization is where so much flavor develops, so don’t rush this step!

Stir in the minced garlic and those beautiful thyme sprigs. Let them cook for about a minute until your kitchen smells absolutely incredible. If you’re using white wine, pour it in now and let it bubble away for another minute to cook off the alcohol while adding wonderful depth to your soup.

Cooking the chicken perfectly

Pour in the chicken broth and bring everything to a gentle simmer. Nestle your chicken breasts into the broth, pop the lid on, and reduce the heat to low. Let those chicken breasts cook for 15-20 minutes until they’re just cooked through. This gentle poaching method keeps the chicken incredibly tender and juicy.

Remove the chicken breasts from the pot and shred them with two forks. Also fish out those thyme sprigs since they’ve done their job!

Creating the creamy magic

Turn the heat up to medium and stir in the heavy cream, shredded parmesan, and some cracked black pepper. Watch as the broth transforms into something absolutely dreamy and luxurious.

Add your cheese tortellini and cook for just 2 minutes. Return the shredded chicken to the pot and let everything heat through while you taste and adjust the seasoning. Sometimes I add a bit more salt or pepper depending on how I’m feeling that day.

Serve this gorgeous soup topped with fresh chopped parsley, and maybe some extra parmesan if you’re feeling fancy!

Storage & Reheating Tips for Chicken Tortellini Soup

This comfort food soup recipe keeps beautifully in the refrigerator for up to 3 days in an airtight container. The flavors actually meld together and get even better overnight, which makes it perfect for meal prep.

When you’re ready to enjoy leftovers, warm them gently in a pot on the stovetop over medium-low heat, stirring occasionally. I don’t recommend freezing this soup because the cream and tortellini don’t hold up well to freezing and thawing.

If you know you’ll want to freeze portions, make the soup without the cream and tortellini, freeze that base, and then add the cream and fresh tortellini when you reheat.

FAQs About Chicken Tortellini Soup

Can I use frozen tortellini for this recipe?

Yes! Frozen tortellini works perfectly in this soup and you don’t even need to thaw it first. Just add it directly to the pot and it’ll cook beautifully in the hot broth. I actually prefer using frozen tortellini because it’s always on hand in my freezer.

Can I make this soup without the white wine?

Absolutely! The white wine adds a nice depth of flavor, but the soup is still incredible without it. You can skip it entirely or substitute it with a bit of extra chicken broth for a non-alcoholic option. I’ve made it both ways and my family loves it either way.

How long will leftovers last in the fridge?

Leftovers will keep for up to 3 days in the fridge when stored in an airtight container. The tortellini will absorb some of the liquid as it sits, so you might want to add a splash of broth when reheating to loosen it up.

Description

A cozy, restaurant-quality soup that’s incredibly comforting and satisfying. Tender chicken, cheese-filled tortellini, and vegetables swim in a creamy parmesan broth that’s simply irresistible.

Ingredients

Scale
  • 1 tbsp olive oil
  • 1 brown or white onion, chopped
  • 1 carrot, chopped
  • 1 celery stick, sliced
  • Salt, to taste
  • 2 tsp minced garlic
  • 2 large sprigs fresh thyme
  • ¼ cup white cooking wine, optional
  • 4 cups low sodium chicken broth
  • 2 chicken breasts
  • ½ lb cheese tortellini
  • ¾ cup heavy cream
  • ¼ cup shredded parmesan
  • Cracked black pepper, to taste
  • Chopped parsley, for serving

Instructions

  1. In a large lidded pot, heat the olive oil over medium-high heat. Add the onion, carrot and celery with a pinch of salt and cook for 6-8 minutes until soft and just starting to turn brown.
  2. Stir in the garlic and the thyme sprigs. Cook for a minute more until the garlic is aromatic, and add the white wine, if using. Allow to bubble for a further minute to cook off the alcohol.
  3. Add the chicken broth and bring to a simmer. Add the chicken breasts, put the lid on and reduce the heat to low. Allow the chicken breasts to cook for 15-20 minutes, or until just cooked through.
  4. Remove the chicken breasts from the pot and shred the meat with two forks. Remove the thyme sprigs. Stir the heavy cream, shredded parmesan and some cracked black pepper into the pot and turn the heat up to medium.
  5. Add the tortellini and cook for 2 minutes. Return the shredded chicken and season to taste with more salt and pepper while the chicken heats through. Serve with chopped parsley.

Notes

1/2 tsp dried thyme can be substituted for the fresh thyme sprigs. Warm leftovers through in a pan on the stovetop. Keep them in the fridge for up to 3 days, but they don’t freeze well. Frozen tortellini works perfectly without thawing.
