  3. Cover the bowl with plastic wrap, then drape a towel over the top. Place it somewhere without drafts for 12-24 hours.
  4. Sprinkle flour on a large square of parchment paper. Turn the dough out onto the center of the parchment.
  5. Flour your hands and sprinkle a bit over the dough. If it feels too loose, add a touch more flour. Fold the dough into itself while rotating to create a ball shape. Flip it so the smooth side faces up and use your hands to finish shaping.
  6. Cut an X in the top with a sharp knife, cover loosely with plastic wrap, and let rest for 30 minutes.
  7. Place your Dutch oven with the lid on in the oven and heat to 450 degrees. Let it heat for the full 30 minutes while the bread rests.
