  • 1 cup (106 grams) almond flour, lightly packed weigh it if you can
  • 2 tablespoons melted coconut oil
  • ½ cup (53 grams) vanilla protein powder plant-based only (more on this below)
  • ½ cup chocolate chips, plus a few extra for topping

Substitution notes:

  • Almond flour: Don’t swap for almond meal the texture will be too dense. Stick with blanched almond flour.
  • Protein powder: Plant-based is non-negotiable here. Whey protein absorbs far less moisture and will leave your dough wet and sticky. A vanilla-flavored plant-based powder works best.
  • Maple syrup: You can reduce to 3 tablespoons if you prefer a less sweet cookie.
  • Chocolate chips: Dark chocolate chips, mini chips, or chopped dark chocolate all work great.

Bake for 15–16 minutes, or until the bottoms are golden brown. The tops may look slightly underdone that’s fine.

Let them cool on the baking sheet for a few minutes, then transfer to a wire rack. They firm up as they cool, so don’t skip this step.

Fridge: Store in an airtight container in the refrigerator for up to 5 days. These are best kept cold because of the cottage cheese.

Freezer: Freeze in a single layer first, then transfer to a zip-lock bag. They keep for up to 2 months. Thaw in the fridge overnight or at room temperature for 20 minutes.

Reheating: A quick 10–15 seconds in the microwave brings them back to that just-baked softness. I actually love eating one straight from the fridge too they get a little fudgier when cold.

Note: the flavors settle after a day in the fridge, and I think they actually taste even better on day two.
