Ingredients

  • 2 cups whole milk cottage cheese
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 cup milk (any type)
  • 2 tablespoons nutritional yeast
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1 can (4 oz) diced green chiles
  • 1 jalapeño, finely diced (seeds removed for mild heat)
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • 1/4 cup salsa verde (optional)
  • 2 green onions, chopped (optional)
  • 1/4 cup fresh cilantro, chopped (optional)


Instructions

  1. Add cottage cheese, milk, and nutritional yeast to a high-speed blender or food processor
  2. Blend for 2-3 minutes until completely smooth and creamy
  3. Transfer the blended mixture to a medium saucepan over medium-low heat
  4. Add garlic powder, onion powder, smoked paprika, cumin, and chili powder
  5. Stir continuously for 2-3 minutes until warmed through
  6. Gradually add the shredded cheddar cheese, stirring constantly until melted and incorporated
  7. Stir in the diced green chiles and jalapeño
  8. Cook for another 2-3 minutes, allowing the flavors to meld together
  9. Taste and adjust seasonings as needed
  10. Remove from heat and stir in salsa verde, green onions, and cilantro if using
  11. Serve warm with tortilla chips or vegetables

Notes

Blend thoroughly for smooth texture. Keep temperature at medium-low to prevent curdling. Add milk one tablespoon at a time if too thick. Store in refrigerator for up to 5 days. Can be frozen for up to 3 months.
