Ingredients
- 2 cups whole milk cottage cheese
- 1/2 cup shredded sharp cheddar cheese
- 1/4 cup milk (any type)
- 2 tablespoons nutritional yeast
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1 can (4 oz) diced green chiles
- 1 jalapeño, finely diced (seeds removed for mild heat)
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon cayenne pepper (optional)
- Salt and black pepper to taste
- 1/4 cup salsa verde (optional)
- 2 green onions, chopped (optional)
- 1/4 cup fresh cilantro, chopped (optional)
Instructions
- Add cottage cheese, milk, and nutritional yeast to a high-speed blender or food processor
- Blend for 2-3 minutes until completely smooth and creamy
- Transfer the blended mixture to a medium saucepan over medium-low heat
- Add garlic powder, onion powder, smoked paprika, cumin, and chili powder
- Stir continuously for 2-3 minutes until warmed through
- Gradually add the shredded cheddar cheese, stirring constantly until melted and incorporated
- Stir in the diced green chiles and jalapeño
- Cook for another 2-3 minutes, allowing the flavors to meld together
- Taste and adjust seasonings as needed
- Remove from heat and stir in salsa verde, green onions, and cilantro if using
- Serve warm with tortilla chips or vegetables
Notes
Blend thoroughly for smooth texture. Keep temperature at medium-low to prevent curdling. Add milk one tablespoon at a time if too thick. Store in refrigerator for up to 5 days. Can be frozen for up to 3 months.
