- 8 ounces full-fat cottage cheese (I recommend Good Culture brand)
- 2 large eggs
- 3-4 tablespoons grated Parmesan cheese
- 2 cloves garlic (minced)
- 1 teaspoon Italian seasoning
- 1 large handful of fresh spinach (optional, for spinach version)
Instructions
- Preheat your oven to 350°F (175°C) and line a quarter sheet pan with parchment paper
- Add cottage cheese, eggs, Parmesan, minced garlic, and Italian seasoning to your food processor or high-speed blender
- Blend for 45 seconds to 1 minute until the mixture is completely smooth
- Pour the batter onto your lined baking sheet and use a silicone spatula to spread it into an even, thin layer about ¼ inch thick
- Bake for 30-35 minutes, or until the top is fully set and lightly golden
- Let the flatbread cool completely before attempting to peel it from the parchment
- Gently peel your wraps from the parchment and fill with your favorite ingredients
