  • 2 large eggs

  • 2 cloves garlic (minced)
  • 1 teaspoon Italian seasoning
  • 1 large handful of fresh spinach (optional, for spinach version)


Instructions

  1. Preheat your oven to 350°F (175°C) and line a quarter sheet pan with parchment paper
  2. Add cottage cheese, eggs, Parmesan, minced garlic, and Italian seasoning to your food processor or high-speed blender
  3. Blend for 45 seconds to 1 minute until the mixture is completely smooth
  4. Pour the batter onto your lined baking sheet and use a silicone spatula to spread it into an even, thin layer about ¼ inch thick
  5. Bake for 30-35 minutes, or until the top is fully set and lightly golden
  6. Let the flatbread cool completely before attempting to peel it from the parchment
