Homemade Low-Sodium Breakfast Sausage Patties

Low-sodium breakfast sausage is the one thing I wish I had started making years ago. Honestly, once I realized how much salt is packed into store-bought patties, I couldn’t go back.

Henry is not someone who watches his sodium intake closely. But after his last checkup, the doctor suggested cutting back on salty processed foods, especially at breakfast. That was my cue to get into the kitchen and figure this out. A few test batches later, these homemade turkey breakfast sausage patties were on the table, and not a single complaint from the kids.

They taste like real sausage. Savory, lightly spiced, and perfectly golden on the outside. No weird fillers, no mystery ingredients, just clean, simple food you feel good about.

Description

Low-sodium breakfast sausage is the one thing I wish I had started making years ago. Honestly, once I realized how much salt is packed into store-bought patties, I could not go back. Henry is not someone who watches his sodium intake closely. But after his last checkup, the doctor suggested cutting back on salty processed foods, especially at breakfast. That was my cue to get into the kitchen and figure this out. A few test batches later, these homemade turkey breakfast sausage patties were on the table — and not a single complaint from the kids. They taste like real sausage. Savory, lightly spiced, and perfectly golden on the outside. No weird fillers, no mystery ingredients, just clean, simple food you feel good about.

Ingredients

Scale
  • 1 pound ground poultry (turkey or chicken)
  • 1 teaspoon rubbed sage
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon ground white pepper
  • 1/4 teaspoon thyme
  • 1/8 teaspoon ground nutmeg
  • 1 tablespoon olive oil

Instructions

  1. Combine ground meat and all spices in a large bowl. Mix until evenly combined. Do not overmix — just enough to bring it all together.
  2. Shape into 8 equal patties and place on a plate or baking sheet. If the mixture feels sticky, pop the plate in the freezer for 30 minutes to firm them up.
  3. Heat a skillet over medium heat. Add 1/2 tablespoon olive oil once the pan is hot.
  4. Cook 4 patties until browned on both sides. Lower heat, cover, and cook through. Drain on paper towels.
  5. Repeat with remaining patties and the other 1/2 tablespoon of olive oil.

Notes

To go even lower on sodium, reduce the Kosher salt to 1/4 teaspoon. The spices do a lot of the heavy lifting here, so you will not miss it. Storage: Store cooked patties in an airtight container in the refrigerator for 3 to 4 days, or freeze for up to 3 months. Layer patties between pieces of parchment paper to prevent sticking. Reheating: Warm in a skillet over low heat for a few minutes, or microwave for 45 to 60 seconds. Variations: Add a pinch of cayenne for a spicy version, swap thyme for rosemary or fennel seed for an Italian-style flavor, or make 12 smaller patties for kids or lighter eaters.

How To Make Low-Sodium Breakfast Sausage Step By Step

Step 1: Mix The Meat And Spices

Add the ground meat, sage, smoked paprika, salt, white pepper, thyme, and nutmeg to a large bowl. Mix everything together until the spices are evenly distributed. Don’t overmix just enough to bring it all together.

Step 2: Shape The Patties

Using your hands, divide the mixture into 8 equal portions and shape them into patties. Place them on a plate or baking sheet.

If the mixture feels sticky and hard to work with, pop the plate in the freezer for 30 minutes. This firms them up and makes shaping much easier.

Step 3: Cook The Sausage Patties

Heat a skillet over medium heat. Add ½ tablespoon of olive oil once the pan is hot.

Place 4 patties in the skillet and cook until browned on both sides. Reduce the heat to low, cover the pan, and let them cook all the way through.

Transfer to a plate lined with paper towels. Repeat with the remaining patties and the other ½ tablespoon of olive oil.

Storage And Reheating

Refrigerator: Store cooked patties in an airtight container for 3 to 4 days.

Freezer: Freeze for up to 3 months. Layer patties between pieces of parchment paper to keep them from sticking together.

Reheating: Warm them in a skillet over low heat for a few minutes, or microwave for 45 to 60 seconds. They come back really well from the freezer trust me.

FAQs About Low-Sodium Breakfast Sausage

Is This Low-Sodium Breakfast Sausage Really Low In Sodium?

Yes! Each serving of 2 patties comes in at about 230mg of sodium, which is well below what you’d find in most packaged breakfast sausage. The final number does depend on your exact meat and salt brand, but this recipe is designed to keep it low.

Can I Make Low-Sodium Breakfast Sausage With Ground Turkey?

Absolutely. Ground turkey is actually what I use most of the time. It keeps the patties lean and light, and it soaks up the spices beautifully. The nutritional info in this post is based on ground turkey.

Can I Freeze Homemade Breakfast Sausage Patties?

Yes, these freeze really well. Cook them first, let them cool completely, then freeze in a single layer before transferring to a freezer bag. They’ll keep for up to 3 months and reheat quickly on a busy morning.

How Do I Keep The Sausage Patties From Falling Apart?

Mix the meat thoroughly and shape the patties firmly. If the mixture is too soft or sticky, freeze them for 30 minutes before cooking. That short chill time makes a huge difference.
