  1. In a small bowl, whisk together the tomato paste, vinegar, sweetener, sesame oil, soy sauce, water, cornstarch, five-spice, and red-pepper flakes. Set aside.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the mushrooms and cook for 3-4 minutes, until they release their moisture and begin to brown.
  3. Add the turkey. Break it into small pieces and cook for about 5 minutes.
  4. Add the garlic, ginger, and white portions of the green onions. Continue cooking until the turkey is completely cooked and reaches 165 degrees F / 74 degrees C internally. USDA guidance specifies 165 degrees F as the minimum safe temperature for ground poultry.
  5. Stir in the water chestnuts. Whisk the sauce again and pour it into the skillet.
