Description

When I was trying to find a high protein artichoke dip that didn’t rely on cream cheese and mayo, I honestly thought I’d have to give up my favorite party appetizer forever. This high protein artichoke dip uses Greek yogurt and cottage cheese as the creamy base, packing in about 6-8 grams of protein per serving while keeping all that rich, satisfying flavor we crave.


Ingredients

  • 1 cup plain Greek yogurt (non-fat or low-fat)
  • ½ cup blended cottage cheese or silken tofu
  • ¼ cup grated Parmesan cheese (or nutritional yeast for vegan)
  • 2 garlic cloves, minced
  • ½ teaspoon onion powder
  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 1 cup fresh or thawed frozen spinach (squeeze dry)
  • Salt and pepper to taste
  • ¼ teaspoon crushed red pepper flakes (optional)
  • Zest of ½ lemon for brightness (optional)


Instructions

  1. Preheat your oven to 375°F if you want to serve this warm
  2. In your food processor, combine the Greek yogurt, cottage cheese, minced garlic, onion powder, and a pinch of salt and pepper
  3. Blend until completely smooth and creamy – about 30-45 seconds should do it
  4. Make sure your spinach is really well-drained and roughly chop your artichoke hearts
  5. Transfer your creamy base to a mixing bowl and gently fold in the chopped artichokes, squeezed spinach, and Parmesan cheese
  6. Add salt, pepper, maybe some lemon zest if you want brightness, or those red pepper flakes if you like a little heat
  7. For cold: Transfer to a serving bowl and dig in immediately with your favorite dippers
  8. For warm: Spoon into a baking dish and bake for 10-15 minutes until bubbly and golden on top

Notes

This dip keeps beautifully in the refrigerator for up to 5 days in an airtight container. The secret is using cottage cheese that’s been blended until smooth – it doesn’t taste cottage cheese-y at all, it just adds incredible creaminess and protein without any weird texture.
