Ingredients for Two Bananas Banana Bread

To make Two Bananas Banana Bread:

  • ▢2 large or 1 cup or 225 gms peeled & mashed bananas
  • ▢1 + ¾ cups or 210 gms all purpose flour
  • ▢1 tsp baking soda
  • ▢¼ tsp cinnamon powder (optional)
  • ▢¼ tsp salt
  • ▢¾ cup or 150 gms brown sugar (if you prefer less sweet then you can add just ½ cup or 100 gms as well.)
  • ▢2 large eggs (make sure they’re at room temperature)
  • ▢¾ tsp vanilla extract (optional)
  • ▢¼ cup or 2 oz or 60 gms sour cream make sure it’s at room temperature (can substitute with greek yogurt or regular plain yogurt)
  • ▢¼ cup or 60 ml whole milk make sure it’s at room temperature
  • ▢½ cup or 120 ml neutral cooking oil (can substitute with same amount of softened or melted butter)

How to Make Two Bananas Banana Bread

GET YOUR DRY INGREDIENTS READY

(NOTE I’m using a 9×5 inch loaf pan here. Please line it with a sheet of parchment paper. You can also leave some hanging on the sides for easy removal. You can grease your pan with butter or oil instead too. Also, completely optional but cut some aluminum foil or parchment paper (enough to cover the top of your bread pan) to use later in the recipe.)

Preheat the oven to 177℃ or 350℉.

Take a medium bowl and add 1 + ¾ cups or 210 gms all purpose flour, ¼ tsp cinnamon powder, 1 tsp baking soda and ¼ tsp salt.

Mix well with the help of a fork, wooden spoon or whisk and set aside.

MASH THE BANANAS

Take a separate large mixing bowl and add 2 large or 1 cup or 225 gms peeled & mashed bananas.

I usually use a fork to mash here. You can use an electric mixer, hand mixer or even stand mixer but it’s really not necessary.

Coming to banana bits in your bread, if you like bigger banana bits in your banana bread with 2 bananas, don’t mash the bananas much.

And if you don’t like any banana bits in your banana bread, you can mash them until they’re super thin or use a food processor.

I prefer something right in the middle. So I mash the bananas until I have medium to small-ish banana bits left.

GET YOUR WET INGREDIENTS READY

To the large bowl of mashed bananas, add the room temperature 2 large eggs, ¾ cup or 150 gms brown sugar, room temperature ¼ cup or 2 oz or 60 gms sour cream, room temperature ¼ cup or 60 ml whole milk and ¾ tsp vanilla extract.

Mix everything for about a minute with a whisk or fork. Don’t worry if the mixture is a little gritty, the sugar will continue to dissolve.

Now add in ½ cup or 120 ml neutral cooking oil to the wet ingredients in the large mixing bowl and mix well. You may see bits of sour cream and that’s okay.

MIX EVERYTHING TOGETHER

Add the dry ingredients to the large mixing bowl of wet ingredients.

Now take a spatula, and gently fold the dry ingredients into the wet ingredients. Please don’t overmix here.

We need to gently fold the ingredients in until everything has mostly mixed together. It’s okay to even have small pockets of flour, don’t worry.

Keep in mind that this is a slightly thin batter. It’ll give us a deliciously moist banana bread loaf.

BAKE YOUR TWO BANANAS BANANA BREAD

Take your prepared pan and carefully pour your banana bread batter into it. Leave about one to one and a half inch of space on top. This is because loaf pan heights and shapes vary and I don’t want your banana bread batter possibly rising and overflowing while baking.

Now, completely optional but I love spraying a knife with a little cooking oil (or even butter) and drawing in a line down the center of our banana bread batter. This gives our banana bread that characteristic crack, stunning! Just go in about an inch with the knife and leave about half an inch space on either side and draw a line right in the center.

Now pop that loaf pan into the oven and bake your banana bread for about 40 to 45 minutes. Start checking on your banana bread at the 35 minute mark.

To check if you banana bread is done, you can do the toothpick test by inserting a toothpick in the center of the loaf.

If it comes out clean or with a few crumbs, it’s done.

If it comes out of the center of the loaf wet, it needs to be baked more. Bake for 3 to 5 minutes and check on it again. Repeat until you get a clean toothpick with a few crumbs.

My banana bread is usually done at the 40 minute mark but every oven is different.

GET YOUR BANANA BREAD OUT!

Get the loaf pan out of the oven and place it on a wire rack or safe surface.

Now, this is an optional step but will give our banana bread that soft smooth top we see in store-bought banana breads. Cover the top of the loaf pan with the aluminum foil or parchment paper we cut in the beginning.

And leave it be for at least half an hour.

Once half an hour is up, lift the aluminum foil or parchment paper off and carefully remove your banana bread loaf out of the loaf pan. This is a delicate moist bread so be careful. You can leave it in the loaf pan to cool for longer if it’s too hot.

If you’ve taken your banana bread loaf out, place it on the wire rack and wait for about 10 to 15 minutes for it to set fully and let the banana bread cool a little or you can wait for an hour if you want a completely cooled banana bread loaf.

If you prefer some warm banana bread like me, go ahead and cut a slice once 15 minutes are up and take a bite.
